Chef Orawin at Padrona is pressing crawfish into a panini and it's exactly as good as it sounds. Crawfish tails, melted cheese, peppers, greens, all pressed golden and crispy between Italian bread. Cut it in half and just look at that cross-section. This is Lent food that doesn't feel like a sacrifice.
Rainbow Roll from Lin's Poke & Sushi
Over at Lin's Poke & Sushi, the Rainbow Roll is as beautiful as it is fresh. Salmon and tuna draped over the top, crispy fried onions, scallions, tobiko, and the whole thing sitting on a bed of sushi rice. If you're doing meatless Fridays, this is the move.
The Susan Po-Nini from Squeezy Street Deli
Brad over at Squeezy Street Deli has The Susan, a smoked salmon po-nini with capers, red onion, and spinach on French bread. It's basically a New York bagel and lox in po-boy form. New Orleans and New York in one bite.
